My name is Jason Evans and this blog chronicles the ups and downs of my journey through the world of Celiac Disease, and a few other adventures along the way. I love the outdoors, traditional bow-hunting, poetry, saltwater fishing, rock carving, Bible study, ranch improvements ,and all sorts of art and culture, travel, and just about anything to do with food and wine, so look for post from all of these categories in your time here.
A self appointed Foodie, I have always been fascinated with the culinary arts. I was born in Kerrville Texas and currently live there with my beautiful wife and daughter. Located in the beautiful Texas Hill Country we are privileged to one of the most diverse food cultures in the world. Influences of the Spanish, German, Mexican, and French immigrants, who settled this area, have combined to create dishes unique only to this region. I am passionate about the style in which we prepare food, and my bout with Celiac has only increased my desire to share these recipes with you.
I’ll just have a sandwich…….
As long as I can remember food has made me sick. Intense cramping, fatigue, nausea, and depression were usually my dessert course. I got to the point of not enjoying food. Out of desperation I would search for the safest thing that I could eat in hopes of not spending the rest of the evening in the restroom. And that is were the title of the blog comes from. I’ll just have a sandwich…because that’s safe, right?
After 25 years of dead-end diagnosis, my wife suggested Celiac Disease as a potential cause of my never ending discomfort. You can imagine how skeptical I was about any suggestion of an answer to this life long question. But after reading up on the symptoms I began to consider that this might be the missing link.
I had a positive test and a negative diagnosis combined with a doctor’s denial of the disease along with the recommendation of high fiber diets and numerous medications. Needless to say, I left there in the same state that I had the dozens of other doctors’ visits.
Reluctantly I tried a Gluten Free Diet. It worked. Of course a sandwich is not safe! Whole wheat bread, processed cheese, processed meat! I found out what MSG stands for. Things were starting to make sense and my body began to respond. My symptoms were retreating and, just as importantly, I was in a better mood. Stability at last; but that was just the beginning. It’s been a rollercoaster of stanch dedication followed by episodes of backsliding and rejection. But faith, support and some good recipes have changed my life.

I was raised in Kerrville and my parents still there. It is a beautiful area. I now live in Corpus Christi and was diagnosed with celiac in 2009. If you ever need anything feel free to let me know.
Good story! Do you shop in SA very often? Do you belong to Alamo Celiac? Just google the name and you’ll find a lot. I did, they are great. Love living in the Austin, SA, Corpus Christi area. We are so lucky to have so much to eat here. Thanks for a great blog, I’ll be looking for more. Where do you eat out in your part of the world? I’d love to visit that part of the hill country but need a place to lunch.
Fransisco’s is my favorite place in town. Paco is very knowledgable and can do just about anything upon request. Also, Mamacita’s can prepare a number of thier menu items without MSG. Thanks for the comment, and you are right about the food in our area, it’s the best!
